Autumn kale slaw w/ clementine dressing


 This raw veggie salad is a pleasing mixture of crunchy textures with sweet, tart & earthy flavors. A wonderfully healthy side to compliment oven baked & roasted autumn foods.

 Ingredients

  • 1 bunch Lacinato kale (dino kale), stems removed, cut in small thin pieces
  • 1 small bunch of romaine lettuce heart, cut in small pieces
  • 1 fennel bulb, sliced thinly
  • 1 inner stalk (celery heart) or more of celery with leaves, diced
  • ~½ cup red cabbage – or more to taste, sliced thinly
  • ¼ -1/2 cups yellow raisins
  • ½ medium red onion, thinly sliced
  • Fennel fronds, minced

 Clementine dressing

  • ½ cup virgin olive oil
  • 2 TBS blood orange or apple cider vinegar
  • 1 small garlic clove, minced
  • ½ tsp. Dijon mustard
  • Pinch of sea salt
  • Fresh ground black pepper
  • Juice of 1 Clementine (=s 1 ½ TBS), or orange juice
