Baked Apples – naked to dressed up


This is a favorite fall and winter food in our house. Baked apples make a great desert, snack or even breakfast addition (depending on how sweetly you embellish them.)

Ingredients:

  • 4 Rome Beauty apples – cored, skins on, well washed

Directions:

Preheat oven to 400. Place washed apples in deep baking dish. Cover and bake 35-40 minutes. You can cook them until they gently split open if you like softer apples. Remove from oven, leave covered, and allow to sit. Juices will reabsorb. Serve warm.

Enjoy plain for breakfast with yogurt and granola or with hot oatmeal.

Variations:

1. Into the middle hole you can add any combination of: chopped walnuts, almonds, raisins, sunflower seeds, dried chopped apricots, dates, sesame seeds, cinnamon, honey, maple syrup, pure vanilla extract, dash of nutmeg, cloves, butter, and oats.

Altogether your nut and fruit combo should equal about 1 cup. Combine everything in a small bowl. In frying pan, melt a few TBS butter and add  a TBS. of syrup/honey. Add a tsp. pure vanilla extract.  Pour over your fruit mixture and mix well before stuffing into the apple.

2. And if the center hole stuffing isn’t enough of an embellishment, you can always go all the way: Peel the apple, roll it in melted butter, then in cinnamon/sugar. Then stuff it!

For the supremene gussied up version, add a dollup of fresh whipped cream or ice cream. (brrr…not in winter!)
