Walnut burgers




These two burgers were served together in week 2 of 2014 Meatless Monday’s Burgerpalooza. The lower burger is the walnut. The upper burger is the lentil/walnut.

Walnut burgers are easy to make and really satisfying to eat! Chewy and dense, these burgers are a winner.  Double the recipe for mileage food & freeze half. They defrost easily in the microwave. Enjoy with: ketchup, salsa, melted cheddar cheese, a little yogurt, your favorite tomato sauce, or any other topping your heart desires.

Makes 6 burgers


2 TBS butter or olive oil

¼ cup onion, minced

1 cup toasted walnuts, finely chopped (bake in 375 degree oven ~10 minutes or until toasted & fragrant)

1/3 cup cooked brown rice

½ cup whole wheat breadcrumbs

2 TBS parsley, minced

2 TBS tomato paste

1 tsp Worcestershire sauce

¼ tsp thyme

¼ tsp sage

Salt & black pepper to taste

1 egg, beaten

2 TBS butter or olive oil



Heat butter or olive oil in skillet, and sauté onions a few minutes. Add onions to bowl with walnuts, cooked brown rice, bread crumbs, parsley, tomato paste, Worcestershire sauce, thyme, sage, salt, pepper, and egg. Mix well. Shape mixture into patties using 1/3 of a cup of mixture for each patty. Heat oil or butter in skillet and brown walnut burgers on both sides.
