Aunt Lil’s vegetarian chopped liver

This recipe just works! It’s been a crowd pleaser for years, and offers a substantial vegetarian alternative to chopped liver or pâté. The secret ingredient is well sautéed onions.

• 1 lb. string beans – steamed until softened (not dead)
• 3-4 onions ( or 1 very large Vidalia) – sautéed well
• 1-2 TBS. olive oil
• 3 hard boiled eggs
• 1 cup walnuts
• S & P to taste

Sauté onions until they become a little blackened.

Depending upon the equipment you have, each ingredient is ground, finely chopped, mashed and/ or pulsed in cuisinart. The idea is a soft pâté but not a liquid-mush. Add S & P. Taste and adjust seasoning. Enjoy.
