Cucumber Raita

Raita is an Indian side dish made of yogurt, vegetables or fruit, and seasonings. It is often made with cucumber. Raita is cooling, refreshing, sweet and pungent rolled into one. It’s a great easy side dish that complements vegetarian foods as well as meats such as lamb. This dish was served with Moroccan Vegetable Stew in my Meatless Monday class.


  • 2 cups plain yogurt
  • 1 -2 hothouse cucumbers, or regular cucumbers peeled and seeded
  • 3 tsp. fresh lemon juice
  • 2 TBS. fresh chopped coriander or mint
  • ½ -1 tsp. cumin powder (to taste, start w/ less, you can always add more if you like!)
  • ½ – 1 tsp sugar (depending upon how sour your yogurt is)
  • ¼ tsp salt (or to taste)



Grate cucumber into a bowl and then squeeze out as much juice as possible. In a medium bowl, combine yogurt, and all spices. Mix well and then add cucumber, gently mixing. Refrigerate for 3 hours before eating, the spices will blend.
