Spicy carrot salad w/ peanuts & mint

Adapted from A Taste of Heaven and Earth – Bettina Vittel

I fell in love with this easy salad years ago. It still pleases!

• 3 ½ cups carrots, grated
• 1 cup peanuts, chopped or whole
• Finely chopped fresh mint, for garnish

Chili Vinaigrette
• 2 TBS rice vinegar
• 1 ½ TBS fresh lime juice
• 1 – 2 tsp fresh orange juice
• 1 TBS chopped fresh cilantro
• 1 TBS pure maple syrup
• ¼ tsp. red chili flakes (chopped up)- or to taste

Whisk all the vinaigrette ingredients together in measuring cup. Mix all ingredients together in a bowl. Flavors will heighten if marinated for a few hours, or enjoy right away.
